Fab Find Friday: Peanut Butter Bars

Nothing says family like good comfort food, right? When I think of my childhood, I often associate special celebrations, favorite times, and holidays with the good food that we shared as a family. Healthy? Probably not… but still…

One of my favorite things as a parent was when my kids starting eating table food. It was so exciting to show them the foods that we like and get them involved… to share our meals with them (that was short-lived in a way… we quickly realized that we then ate nothing because of the work involved with feeding said child). I’ll never forget how Bailey loved, savored, and basically demanded more of the lobster and crab dip at Joe’s Crab Shack. She was a mere 9 months old. And, no, we had no idea that children under 1 weren’t supposed to have seafood. Oh… but she loved it.

I had no idea when my kids were babies how frustrating it would be to feed them when they grew up. I just assumed that if they ate everything under the sun as babies, that they would eat it as an older child. No, that isn’t how it worked with our little ones. Instead, they are completely opposite. Bailey loves potatoes; Jake hates them. Bailey hates tomatoes and tomato sauces; Jake takes a tomato in his lunch everyday and can eat his weight in spaghetti on a daily basis.

So, I am constantly in search of new recipes that will meet a variety of needs. And, no, there isn’t a perfect meal for our family, unfortunately.:)

However, we all love sweets. So, a few weeks ago, when one of my high school friends posted a picture on Facebook of a candy that we had when we were in school on pizza day (Fridays), I was transported back to my childhood. I could literally taste the school pizza followed by the peanut butter bars and a chocolate milk. Talk about a comfort food. Immediately, I started searching for a recipe for this simple dessert. My kids, especially my Reese’s-Cup-loving-son, will love these.

Since I’m planning on making these this weekend, and since it is Friday, which has always been pizza day in our school systems, and since I’m dying to share comfort food with everyone I know and love…

So I made these this weekend and they were good but too mushy on the bottom. I am thinking if i cut the butter down to 1.5 sticks they will hold together better. I am thinking what we had in school was creamier than these but who knows. I was young and as long as it was chocolate, I was happy! I’ll try them again with less butter whenever I have people here to eat em!

Well, I hope it is as good… I am going to be disappointed if I fix it this weekend and it isn’t the complete perfection that I remember… I’m afraid that they weren’t as good as I thought they were when I was a kid!!!! Let me know what you think!

I could kiss you right now! I had these when I was in school as well and have been looking for this recipe!!!! Everything I had found thus far had not been what I remember from my grade school days. THANK YOU THANK YOU THANK YOU!
