12 Weeks of Homemade Christmas – with a Halloween Twist…

“How many more night-nights, Mommy?”

That is what I heard from Jackson this whole week.  You see, my Aunt and Uncle came last week for a visit.  And they so very nicely came bearing gifts for the boys.  One of them was these adorable pancake molds

But during the week…well, let’s just say morning is not the best time for me to be making pancakes…it is definitely a very rushed time of the day.  So, I promised Jackson we could make them this weekend…and Saturday was the day.  In fact, the first thing he said to me when he got up was “today is pancake day!!”

And he definitely had fun helping…


Carson even got in on the fun…


Now, a tip I must pass along…before pouring the batter into the molds make sure you liberally use cooking spray on both the molds and pan.  It will definitely help with the batter not sticking to the molds (and, yes, I know this from experience!).  Also, the handles turn up…so they do not get so hot (again, I know this from experience :)).

But then pour away…


Who says a watched pan doesn’t cook?


After pouring the batter into the molds, wait about a minute or so (until they look like they are firming up a bit) and then remove the molds…


Then flip them over to finish cooking.
